They say breakfast is the most important meal of the day, but since last August I have been somewhat of a night owl. Co-hosting one or two nights a week from 11 p.m. to Midnight on Pregame’s First Preview Radio Show doesn’t have me seeing too many early morning trips for breakfast.

On April 1 the show moved to its new time slot at 10 a.m. so now breakfast is back. One of my favorite breakfast places in all of Las Vegas is BabyStacks Café (2400 N. Buffalo Dr.). I have been there countless times and I always order the same thing.

Well sort of.

Every time I go to BabyStacks I order pancakes. OK, before you say that sounds boring and why should we make a special trip for pancakes, let me tell you – these are not your ordinary pancakes.

They have 20 different kinds of pancakes on the menu. Personally, my goal is to try all of them. Even though I have been there probably 20 times I seem to be stuck on four pancakes that I rotate between.

My favorite is their S’more Pancakes. They put chocolate chips and marshmallows in the batter then top the pancakes with fresh whipped cream and graham cracker crumbles. Do I need to say more?

Second on my list, but the choice of most customers, are the Red Velvet pancakes. They take red velvet batter, top it with chocolate crumbles and serve with cream cheese syrup. This is by far their best selling pancake.

My third favorite pancake is their Banana Cream Pie. If you like banana cream pie you are going to like this. They put bananas right in the batter then top the pancake with fresh whipped cream, fresh sliced bananas and drizzle it with a banana cream sauce. The final piece of this masterpiece is sprinkling crushed pie crust and almonds over the pancakes.

My next favorite pancake is Cinnabun. This one is simple as they take the pancake, dust it with cinnamon and, then drizzle it with their homemade sweet icing. Yes, it tastes just like those famous cinnamon rolls you buy at the food court at the mall. Now with those four getting all my attention, especially the first two, how am I ever going to try all 20?

One of the pancakes on my list that I haven’t tried yet is the Lemon Ricotta. You get three crepe like pancakes dusted with powdered sugar and served with fresh sliced lemons and cream cheese syrup.

If you are a fan of carrot cake they have a carrot cake pancake complete with cream cheese syrup and topped with pecans. The Rocky Road and White Chocolate Macadamia Nut pancakes are also on my to-do list.

BabyStacks Café is only open for breakfast and lunch and they have an extensive menu. I love the look I see on kid’s faces when the waitress brings them their order of pancakes. I’m sure I have that same look on my face.

So when you want breakfast and you’re in the mood for pancakes, head over to BabyStacks Café. I give them 3.75 Forks!
