Steak. It’s what’s for dinner.

I’m always excited when we get a new Steakhouse here in town and was eagerly awaiting the opening of this one. Cleaver – Butchered Meats, Seafood & Cocktails, located at 3900 Paradise Road, Suite F, just opened a couple of weeks ago. The reason I was excited to try Cleaver is that it’s the sister property to one of my favorite places in town. If you have ever been to Herbs & Rye you will want to check out Cleaver. Herbs & Rye offers 50 percent off its steaks during Happy Hour from 5-8 p.m.  and again during late night Happy Hour from 12-3a.m. 

At the new location you do not get a side dish included with the steak as the sides are served a la carte. The side dishes are big enough to share.  For dinner, I went with my usual – the N.Y. Strip which is a 14-ounce cut for $48 – and is priced lower than the steakhouses on the Las Vegas Strip. But during Happy Hour, that N.Y. Strip will only set you back $24. 

If I’m not ordering the Strip, my second choice is always the 16-ounce. Rib-Eye that is just $32 during Happy Hour. All the steaks at Cleaver are top quality, and when it comes to steaks and chops, you know I’m picky, having grown up in house where my dad owned a butcher shop.  Cleaver has more options on its menu than at Herbs & Rye. You can order your steak with a special Crust & Rub or Flavored Butters for a small charge. I got the Parmesan and Balsamic Crust and enjoyed it.

I would advise making reservations if you want to go during Happy Hour as it will become very busy like its sister property. I give Cleaver – Butchered Meats, Seafood & Cocktails a rating of 3.75 Forks.
