Carmel Room offers taste of specialty dining

The Strip resorts are famous for their upscale dining rooms and celebrity chefs. But diners who want superb dining at affordable prices should look no further than the Carmel Room at the Rampart Casino in Summerlin.

Opened for just a few months, the Carmel Room is the latest addition to a fine lineup of restaurants at the Rampart, located within the JW Marriott hotel.

Soft colors, sparkling chandeliers and fine table settings set the tone for specialty dining in an intimate environment punctuated by attentive table service.

Chef Paul O’Shea has created an eclectic menu, blending Continental specialties with Mediterranean influences and a European accent.

O’Shea’s creations include appetizers such as scampi, seared ahi and escargot, as well as tasty salads and soups, including a tangy lobster bisque.

House favorites include salmon Wellington (tender filet wrapped in paper-thin dough), filet mignon, chateaubriand bouquetiere, Dover sole, duck a l’orange, veal and lamb chops, aged steaks, Australian lobster tail and selected pasta dishes.

Complimenting the well-presented entrees are a nice mix of accompaniments, including duchess potatoes, wild rice, creamed spinach, sharp cheddar cheese au gratin potatoes and sautéed Portabella mushrooms.

It is suggested that diners save (or make) room for dessert, which include classic, and sometimes tableside prepared, dishes such as Bananas Foster, Cherries Jubiliee and chocolate soufflé.

As one would expect from a first-class, upscale restaurant, the service at the Carmel Room is attentive and thoughtful as the wait staff continually strives to ensure the needs of diners are always being met.

In addition to Chef O’Shea’s specialties, the Carmel Room offers a superb selection of fine wines from Napa Valley and Europe.

The Carmel Room is open nightly for dinner beginning at 5 p.m.

"There was a strong need for an upscale restaurant like the Carmel Room here at the Rampart Casino," said Bill Paulos, founder and co-owner of Ramparts Resorts Management. "Rampart Casino now offers several dining choices to cater to the Summerlin community, and other Las Vegas locals.

Those other restaurants include the Promenade Café and extensive Rampart Buffet, as well as Gustav Mauler’s Spiedini and Oxo restaurants.

The Rampart Casino, located within the JW Marriott Resort, is a subsidiary of Rampart Resorts Management. Its "sister" property, the Cannery, opened last January in North Las Vegas.
