The MGM Grand has a new addition to its roster of award winning restaurants, Fiamma Trattoria, which opened last week.
The restaurant will be run by three-star, James Beard-nominated, Esquire Chef of the Year, Michael White. White says he plans a more casual take on his regional Italian specialties, and pastry chef Elizabeth Katz will deal out creative variations on classic Italian desserts.
The cozy but upscale restaurant includes a 300-seat sleek split-level dining room (see and be seen!), a café for a bite between bets, and a bar and lounge.
Shortly after opening, Anthony Amoroso was appointed Chef di Cucina, who shares Chef White’s vision of offering fine Italian cuisine firmly rooted in authenticity, each dish a showcase for fresh, high-quality ingredients.
Amoroso plans to to introduce Fiamma guests to the restaurant’s renditions of classic and contemporary Italian specialty cuisine of regions like Tuscany, Veneto, Friuli and Lazio.
Amoroso attended the Aspen Food and Wine Classic this past year, and has made several appearances cooking at The James Beard House.
Over the past 10 years, Amoroso has worked for several top hotels and restaurants throughout the Northeast. Most recently, he worked with high profile chef/restaurateur Rick Moonen.
Rounding out the staff are Master Sommelier Greg Harrington, whose wine-by-the glass and bottle selection is sure to put the odds in diner’s favor, and Master Mixologist Eben Klemm who shakes up the bar with lively libations ”” Las Vegas style!
Fiamma Trattoria is open from 5:30 p.m. to 10:30 p.m.
