The Palazzo's newest cocktail bar, Rosina, introduces its chocolate and cocktail pairings program, in time for Valentine's Day. The team at Rosina has selected chocolates from famed French chocolatier Debauve & Gallais, which has built a cult following among aristocrats, artists, gourmands and celebrities, since it was founded in 1800.

At Rosina, guests who visit between 9 p.m. and midnight will be offered a treat -- a Debauve & Gallais chocolate that specifically pairs with their choice of cocktail.

The New York Times Style called the chocolates "arguably the world's finest"  and Bon Appetit called them the "crème de la crème of Left Bank chocolates."

The confections were first developed for Marie Antoinette in order to ease her distaste for taking medicine. In fact, it was the Queen herself who named these chocolates pistoles after the French term for gold coins, a term the chocolatier still uses today.

It is rumored that Vincent Van Gogh once bartered paintings for pieces of Debauve & Gallais chocolates, which had been appointed the official chocolatier of Louis XVIII, Charles X and Louis Philippe.

Pairing Debauve & Gallaischocolates with cocktails is certainly not new. They had a following among the Russian court, with the tsars traditionally favoring the 99% dark chocolates as an accompaniment to their strongest vodkas.
