LATIN AMERICAN-INSPIRED FOOD TRENDS COMING UP HOT, HOT, HOT THIS SUMMER
A quartet of fine restaurants with a Latin American flair have made The Venetian and The Palazzo the epicenter of the latest culinary trend to hit the Las Vegas Strip. Chica, Once, SUGARCANE raw bar grill, and SUSHISAMBA all highlight the diverse flavors of Latin American cuisine, making for perfect opportunities to take a culinary journey while in Las Vegas.
Created by Celebrity Chef Lorena Garcia, Chica in Restaurant Row does that and more – delivering robust and vibrant flavors of Latin cuisine combined with a dynamic wine and mixology program. The restaurant’s menu features classic renditions of Latin dishes, allow guests the opportunity to explore the flavors of Latin American cuisine as one culture, with influences from Venezuela, Peru, Brazil, Mexico and Argentina, among many more.
SUGARCANE raw bar grill in Restaurant Row features an array of globally inspired small plates that come from three kitchens – an open fire grill, raw bar and traditional kitchen – all overseen by Chef Partner Timon Balloo. The restaurant’s menu draws from Latin, Asian and European inspiration, allowing guests to share the ultimate dining experience. The Latin culture invites guests to become family, and the same can be said for SUGARCANE, with its “kick back, eat well, and stay awhile” motto.
Most recently, The Palazzo welcomed Once to the Grand Canal Shoppes. This one-of-a-kind Peruvian Nikkei dining experience is from one of Los Angeles’ most acclaimed chefs, Ricardo Zarate. Once (pronounced on-seh), which means “eleven” in Spanish and symbolizes Zarate’s spot in his line of 13 siblings, is inspired by his earliest memories of the food of his native Peru. Drawing distinct flavors from both Peru and Japan, Once’s menu features 11 à la carte shared plates, which rotate weekly based upon seasonal ingredients.
An epicurean trendsetter, SUSHISAMBA helped introduce Las Vegas to upscale fusion cuisine, and the ever-popular destination is a leader in edible Latin flair. Under the watch of Chef John Um, bold and bright ingredients from Brazil, Peru, and Japan complement each other. Starters include succulent broiled Peruvian bay scallops with shiso-lime-butter crust; crispy yellowtail taquitos with spicy yuzu sauce; and rock shrimp tempura with golden pea shoots. Skewered anticuchos include choices like organic chicken, ribeye, and scallops. For large plates, dig into miso-marinated Chilean sea bass and Brazilian moqueca mista -- a tropical melange of shrimp, squid, sea bass, mussels, clams, coconut milk, and dendê oil. And more of Brazil's big flavors come to fore with churrasco plates piled with ribeye, chorizo, and wagyu picanha sided with white rice, black beans, collard greens, and farofa.
Latin flavors are experiencing a rising surge, so be sure to try one of these three Latin-inspired restaurants at The Venetian and The Palazzo Las Vegas.
